Course overview
This course will introduce nutritional guidelines for improved health and wellbeing and food systems in relation to food security and the environment. Indigenous food knowledge will begin to be developed. Scientific, professional and lay communication, both written and verbal: from sourcing information using credible resources, reading and critical analysis of the literature, to delivering the knowledge in an appropriate format, will be developed. This course aligns with the program intent to begin the foundational development of evidence-based knowledge to develop and critique nutritional interventions designed to improve health and athletic performance.
Course learning outcomes
- Describe the nutritional and dietary guidelines as they relate to healthy dietary practices
- Identify and interpret information relevant to nutrition with respect to its accuracy, reliability and relevance
- Describe the food system in relation to food security and the environment
- Describe the nutrient content and environmental impact of local, Aboriginal and developing countries foods from paddock to plate
- Demonstrate the principles of scientific and professional writing and oral communication skills for nutrition
