Admission criteria
To be eligible, an applicant must have achieved the following minimum entry requirement and demonstrate they fulfill any prerequisite and essential criteria for admission. In cases where there are more eligible applicants than available places, admission will be competitive with ranks based on the entry criteria.
- A completed bachelor (AQF level 7) degree or equivalent in a science field from a recognised higher education institution.
English language entry requirements
In addition, international students who speak English as an additional language must have obtained one of the following standards within the last two years prior to admission. Possession of one or more of these qualifications, in addition to the academic entry requirements, does not, in itself, guarantee a place at Adelaide University. Applications are considered on an individual basis and selection is competitive. Where previous study/work experience was conducted in English, the application must be accompanied by certified documentation from the educational institution/employer certifying that the language of instruction/employment was English.

What you'll learn
Our Master of Viticulture and Oenology is underpinned by a strong fundamental scientific background. A hands-on approach means you’ll have the ability to implement progressive scientific-based approaches to grape and wine production.
Throughout this program, there is an emphasis on the key technical methods and sensory (wine tasting) skills required for a career in viticulture and oenology.
Focus on the principles and practices of wine clarification and stabilisation. Dive into cellar and winery management, gaining an insight into key aspects of vintage planning and logistics.
Cover the entire life cycle of the cultivated grapevine. Take advantage of the vine growth phases that occur from bud burst, flowering and fruit-set leading up to harvest on-campus.
In your final year, you’ll choose to complete a research project or professional experience placement. Depending on your career aspirations, you’ll choose the project best for you.
Your placement will be a 10-week block in an approved viticultural enterprise or commercial winery. You’ll gain experience and fresh perspectives in the wine industry during the vintage period. Alternatively, you’ll complete a laboratory or industry-based research project.
You may also choose up to five electives from select oenology and science courses. These include specialised topics on fermentation technology and soil and plant nutrition. Perhaps you might even undertake a science international study tour at a partner institution.
Assessments will include assignments, practical reports and a final examination.

Your campus

Study hours
Your courses will require a combination of different learning formats, including lectures, tutorials, workshops, seminars and practicals. Aside from your classes, you’ll also need to allocate additional time for independent study. This may include assignments, readings, projects and contributing to online discussion forums. As a rough guide, full-time studies may require 12-26 hours of class time and 14-18 hours of independent study per week.
