Course overview
The aim of this course is to prepare students for managerial careers within the hospitality industry, focusing on the management of business operations through the lens of key departments including marketing, finance, HRM, risk and logistics. Overview of Hospitality Organisations; Product and service design; Service delivery and quality; Marketing operations for hospitality; Logistics and inventory control; Risk, safety and security; Human resources in hospitality; Hospitality finance- part 1; Hospitality finance- part 2; Managing sustainability.
Course learning outcomes
- Explain the role and key operational functions of hospitality organisations, and challenges and demands facing managers in hospitality firms.
- Analyse the performance of key operations in hospitality firms -including risk, logistics, marketing and HR.
- Develop and interpret key financial statements and performance indicators to support managerial decision making.
- Analyse internal and external factors in order to make evidenced managerial decisions.
- Discuss how sustainability practices in hospitality firms effect the triple bottom line of profit, people and environment.
- Demonstrate Business Enterprise Skills in the context of the Tourism, Event and Hospitality Management discipline: i) Problem-solving (intermediate level); ii) Written Communication (intermediate level); and iii) International perspective (intermediate level).
