Course overview
Students will learn how to design, formulate, produce and package market foods under industry conditions which are relevant to the Australian marketplace.
Course learning outcomes
- Develop and analyse an innovative food product
- Demonstrate technical skills and understanding across all stages of food product development, from concept design to shelf
- Demonstrate competency of laboratory skills to ensure quality and safety, including good manufacturing practice (GMP), hazard assessment critical control point (HACCP), and comply with the Food Standards Code
- Describe the functionality of packaging in product development and comply with national packaging targets and labelling
- Work as a team and with industry to develop a new food product from concept to prototype, and effectively analyse and communicate findings in a scientific manner

If you are an international student, or a domestic student studying in a full fee paying place, and are continuing study that you commenced in 2025 or earlier, your fees will be available here before enrolments open for 2026.
